Innholdet av b\u00e5de n\u00e6ringsstoffer og milj\u00f8gifter (tungmetaller og organiske milj\u00f8gifter) har v\u00e6rt kjent kun i begrenset grad. Derfor ble det et bredt spekter av n\u00e6ringsstoffer slik som fettinnhold, fettsyrer, vitaminer og mineraler analysert. Kadmium, bly, nikkel og arsen var blant de tungmetallene som inngikk i studien som var utf\u00f8rt av Senter for samisk helseforskning (SSHF). Tradisjonelt kosthold fra nord inneholder mer enn bare kj\u00f8ttet, derfor ble i tillegg til kj\u00f8tt ogs\u00e5 niv\u00e5er av disse stoffene m\u00e5lt i lever, talg og benmarg fra rein.<\/p>\n<h2>Om studien<\/h2>\n<p>Studien er basert p\u00e5 pr\u00f8ver fra 131 rein fra 14 beitedistrikter fordelt p\u00e5 4 fylker (Finnmark, Troms, Nordland og S\u00f8r-Tr\u00f8ndelag) i Nord- og Midt-Norge. Pr\u00f8vene var samlet inn i l\u00f8pet av to forskjellige perioder 2004-2005 og 2008-2009. De fleste av pr\u00f8vene var tatt fra rein fra Finnmark Fylke, og med at Finnmark har den st\u00f8rste andelen av reinbeitedistrikter i landet. Reinkj\u00f8tt er magert og en god kilde til omega-3 fettsyrer. Niv\u00e5er av noen omega-3 fettsyrer i reinkj\u00f8tt er sammenlignbare med det som er rapportert i krabbe, scampi, bl\u00e5skjell, \u00f8sters og torsk. I tillegg, inneholder reinlever niv\u00e5er av vitaminer A, B9, B12, jern og selen som er h\u00f8ye nok til \u00e5 dekke det daglige anbefalte inntaket (RDA\/RDI). RDA\/RDI er niv\u00e5er av anbefalt daglig inntak av viktige n\u00e6ringsstoffer som p\u00e5 vitenskapelig grunnlag, er funnet tilstrekkelig for \u00e5 dekke behovet for n\u00e6ringsstoffer for alle friske personer. Kj\u00f8tt, talg og benmarg fra rein er en god kilde til omega-3 og omega-6 fettsyrer. Reintalg inneholder h\u00f8ye niv\u00e5er av vitamin B12, mens benmarg inneholder de h\u00f8yeste niv\u00e5er av vitamin E og kalsium.<\/p>\n<p>Niv\u00e5ene av de aller fleste av n\u00e6ringsstoffene i lever, talg og benmarg var betydelig h\u00f8yre enn de som finnes i kj\u00f8tt. Reinkj\u00f8tt inneholder betydelig h\u00f8yere niv\u00e5 av vitamin B12 sammenlignet med andre typer kj\u00f8tt og er derfor god kilde til dette vitaminet.
